"How about a nice, fluffy phyllo pastry prepared in a cake form which besides being original is also easy and extremely delicious?"

Ingredients

  • eggs - 3
  • phyllo pastry - 10.5 oz (300 g), sheets
  • cheese - 9 oz (250 g) (mix of feta, cheese and parmesan)
  • oil - 1/5 cup (60 ml)
  • milk - 2/5 cup (100 ml)
  • flour - 2 tbsp
  • baking powder - 2 tsp
  • all purpose spice - 1 tsp, for soup (optional)
  • black pepper - 1 pinch
  • butter - for the form
  • breadcrumbs - for the form

How to make

Sift the flour and baking powder. Grate the cheeses. Beat the eggs. To them, add the flour with the baking powder and grated cheeses.

Stir until you get a homogeneous mixture. Cut the phyllo pastry sheets into thin strips or crumble them into small pieces. Separate them well so they don't stick together. Add them to the egg mixture and stir well once again.

Melt a little butter and smear a rectangular cake form with it. Sprinkle the form with breadcrumbs so that they cover it thoroughly and carefully shake off any excess.

Distribute the cake mix on top. Bake the phyllo pastry in a preheated 390°F (200 °C) until ready. Sometimes I smear the sheets with butter, stick them together in 3's and bake them in the oven until they take on a golden color.

Then I leave them to cool completely and break them into pieces. Instead of the cut into strips raw sheets, I can add the baked and crumbled to pieces sheets and a little blanched dock. In both cases, what you get is amazing phyllo pastries in a cake form.
