Ingredients

  • pork - 2 lb (1 kg), neck
  • honey - 1 tsp
  • mustard - 1 tbsp
  • paprika - 1 tsp, smoked
  • salt
  • black pepper

  • oyster mushrooms - 7 oz (200 g)
  • butter - 1 tbsp
  • oil - 1 tbsp
  • salt

How to make

Cut the meat into slices about 1 1/4″ (3 cm) thick. I used neck meat but you can use pork breast as well. Mix all the spices in a bowl and smear the meat with it.

Cover with foil and leave it in the fridge for at least 2 hours. Cut each piece of meat into 3 strips. Stick them together with a toothpick on one end twist the strips into a weave.

Stick a toothpick through the other end as well, in order to keep the weave together. Weave the rest of the meat strips the same way. Pour 4/5 cup (200 ml) water in an oven dish and put the meat in it.

Put a sheet of baking paper to cover the oven dish (it needs to be a little larger than the oven dish itself). Bake in a preheated 360°F (180 °C) oven for about 1 hour 30 min.

Clean the mushrooms and braise or saute them in a little butter and oil. Season and serve them with the meat!
