How to make
Beat the fillet into a slim elliptical form. Mix the finely chopped cheese, ham, mushrooms, pickles and parsley with soya sauce and place at one end of the fillet.
Roll it up in the shape of a spindle and make a double crumbing: flour, egg, breadcrumbs, egg and then fry the rolled side first.
Serve sliced with a hot or cold side dish.
