How to make
Sift the flour into a bowl. Pour the spelt flour into it. Add the dry yeast, a small pinch of sugar and pinch of salt. Stir the dry ingredients together. Now pour in the milk.
Whisk 2 eggs in a separate bowl. Pour them into the rest of the ingredients. Add 2 tbsp oil as well.
Stir everything well with a spoon to a thick and smooth mixture. Make sure there's no lumps. Leave it aside to rest for 30 min. It will puff up a little.
Smear a pan with the pat of butter and use a small ladle to pour in the mixture into 4 spots. Try to get them to form small circles. Fry on both sides to a nice tan. Repeat this process for the rest of the mixture. You're going to get about 26 blini.
Arrange them in a plate. Serve the blini with 1 tsp sour cream and 1/2 tsp red caviar.
