How to make
Clean the quails and boil them in salted water for 10 min. Pour oil/olive oil in a pan and saute the finely chopped mushrooms and part of the smoked meat (about 2 oz (50 g)).
Season the quails with salt and black pepper to taste. Stuff them with the prepared marinade of mushrooms and smoked meat. Wrap them with the bacon that you've cut into strips.
Pour oil in the pan and braise the chopped into crescents onions. Add the roundly sliced peppers and carrots.
After a few min. add the mushrooms and spices. Stir well and pour the mixture into a clay pot or slow cooker. On top of it, arrange the quails. Distribute the cherry tomatoes, olives and the rest of the bacon.
Close the lid and cook at 330°F (165 °C) for about 2 hours. After an hour passes, add the tomato paste and cook the dish finished. Sprinkle with finely chopped parsley and serve with a garnish of your choice.
