How to make
Grate the zucchini and to it add the salt, eggs, finely chopped spearmint and flour, as much as it absorbs, in order to obtain a thick mixture (a little thicker than a pancake batter).
Lay out the prepared mixture into an oven dish with baking paper and bake in a moderate oven until ready (about 20 min).
Once the layer is ready, wrap it into a roll while still warm with the baking paper you baked it in and then leave it to cool completely.
Once cooled, unroll it, smear it with mayonnaise, grate feta cheese on top and roll it back up again.
