Ingredients

  • beef - 21 oz (600 g), silverside cut
  • onions - 1 head, old
  • green onions - 1 bunch
  • carrots - 2
  • peppers - 1, green
  • celery - 1 stalk
  • tomatoes - 2, grated
  • potatoes - 17.5 oz (500 g)
  • chili peppers - 1, dried
  • paprika - 1/2 tsp, smoked
  • black pepper - mixed
  • olive oil - and a dab of butter
  • parsley
  • spearmint - for sprinkling

How to make

Cooking in a pressure cooker:

Cut the meat into equal-sized round slices and boil them in the pressure cooker for about 40 min. or until fully boiled. Take the meat out but save the broth.

Wash the pressure cooker, dry it and pour in olive oil, while also adding chopped onions, the diagonally chopped carrots, diced green pepper, dried chili pepper (chopped), celery (chopped), salt, pepper mix and leave them to saute until the vegetables soften. Add the smoked paprika as well.

Add in the boiled meat, stir so it absorbs the vegetable aromas, then add the grated tomatoes. Add the potatoes, cut into coarse pieces, and pour in the broth from the meat. Leave it to cook on a medium stove for about 15 min. Once the stew is fully boiled, add a dab of quality butter for extra flavor.

Sprinkle with chopped parsley and spearmint.

Note: Silverside beef looks very similar to tenderloin beef. This is the most tender and tasty part of the beef. All dishes with silverside beef are light and aromatic. It is always cut into wide, round slices.
