Ingredients

  • pork - 17.5 oz (500 g), cut into pieces
  • potatoes - 3.5 lb (1.5 kg)
  • peppers - 2, red and green
  • carrots - 1 - 2
  • onion - 1 large head
  • tomatoes - 10.5 oz (300 g) canned
  • flour - 2 - 3 tablespoons
  • salt
  • bay leaf - 1
  • black pepper
  • paprika
  • parsley - fresh
  • oil

How to make

Heat oil in a pot and put the pork in to fry evenly. Then remove it, and in the same oil fry the chopped onions, carrots, peppers. Once softened, top with the tomatoes, 1 cup of hot water and the cut potatoes.

Put the bay leaf in and boil with the lid on for 10 minutes. Then pour the fried pork in, add the other spices to taste, stir well and finish boiling the dish.

Finally, if desired, thicken the sauce with the flour diluted in a little water. Serve each potato stew portion with pork and sprigs of fresh parsley.
