Ingredients

  • eggs - 1
  • almond butter - 1/4 cup
  • coconut mousse - 1/4 cup
  • zucchini - 1 cup, grated and drained
  • milk - 1/2 cup (125 g)
  • honey - 2 tbsp (30 g)
  • coconut sugar - 2 tbsp (30 g)
  • muscovado - 1/5 cup (55 g)
  • baking soda - 1 tsp
  • oat flour - 1 1/3 cups
  • cocoa - 1 2/3 tbsp (25 g)
  • dark chocolate - 1 oz (35 g), crumbled

How to make

In a deep bowl, blend the egg, almond butter, coconut mousse, zucchini, milk, honey and 2 types of sugar together.

Add the rest of the ingredients, stir well and pour it out into an oven dish with baking paper. Bake the cake for about 45-50 min. in a preheated 340°F (170°С) oven.

For the vegan version, substitute the egg with 1 tbsp flax flour mixed with 3 tbsp water. Pick out an almond, coconut or other nut milk and instead of honey use whatever sweetener you like - such as more coconut sugar, white sugar, maple syrup and so on.
