How to make
Boil the couscous in salted water with a pinch of salt. Rinse the ready couscous with cold water and put it to drain from its water.
Mix the minced meat with a little water to make pellets. In a pan, pour in 4 tablespoons olive oil. Add the finely chopped leeks and minced meat. Season with a pinch of turmeric, add fenugreek, parsley, black pepper.
Add some water and saute until the liquid evaporates. Add salt to taste. To the fried leeks and mince add the boiled and drained of water couscous.
Add a piece of butter and fry it briefly. Serve warm, sprinkle each serving with grated cheese.
