How to make
Wash and boil the wheat for 40 min. in 3 cups of cold water. Remove it from the heat and leave the container closed until the wheat swells and absorbs all the water.
Pour the wheat in a bowl and add the vanilla, cinnamon, honey and chopped walnuts. Wash, clean, peel and cut the quinces into cubes and saute them on the stove with a little water and the sugar. Add this to the wheat.
Prepare the phyllo pastry, put some wheat stuffing on the bottom part of each sheet. Roll up the phyllo pastry sheets into rolls and arrange them in a lightly greased tray.
Bake at 360°F (180 °C) for 40 minutes. Remove the phyllo pastry pie and sprinkle it with water, cover it with a cloth and allow it to soften.
For the syrup: put 2/5 cup (100 ml) of water, the sugar and lemon juice and rinds in a deep container and leave it to boil.
Pour the warm, but not hot, syrup over the finished pie and allow it to soak well before serving.
