How to make
Melt the butter and allow it to cool to room temperature. Add the egg yolks and 2/5 cup (100 grams) of sugar and mix while stirring in one direction only.
Mix the flour with two thirds of the cream. Heat it without boiling, then stir until thickened. Remove and put it in a container with ice. Stir until completely cool. Add the eggs with the sugar, the butter and the remaining cream.
Fry the blini in an oiled, heated pan. Do not flip them over because the dough is very thin and will tear. After they have been fried well over medium heat, put them right into the serving plate.
Sprinkle the remaining sugar between the blini. Serve with a jam of your choosing.
