How to make
First, whisk the eggs with the sugar until the sugar is dissolved. Then add the milk and stir gently again to obtain a homogeneous mixture. Start to add a little flour at a time, but do not stop stirring.
Your goal is to get the mixture to a slightly thick density, so do not pour the flour all in at once, add it in gradually.
Finally, add oil to the mixture, which prevents the pancakes from sticking to the pan and makes turning them over much easier.
Pour the mixture into a hot Teflon pan (if using another type of pan you may need to grease it from time to time) and when the pancake is ready on one side, turn it to the other.
Smear the ready hot pancakes with a little butter, to make them softer. Serve with jam, marmalade, chocolate or other filling of your choice.
