"Elegant, melt-in-your-mouth pancakes with carbonated water, garnished with honey."

Ingredients

  • eggs - 3
  • carbonated water - 4/5 cup (200 ml)
  • milk - 4/5 cup (200 ml)
  • powdered sugar - 1 tbsp
  • flour - 4/5 cup (200 g)
  • vanilla - 2/5 tsp (2 g)
  • butter - 3 tbsp (melted) + 1/3 cup (80 g) for frying
  • salt - 1 pinch
  • honey - or jam or marmalade for smearing

How to make

Beat the eggs with the powdered sugar, vanilla, add a pinch of salt.

Gradually add the milk and butter while stirring. Then add the carbonated water. Gradually add the flour as well.

Sift the mixture through a sieve. Leave it at room temperature about 30 min.

In a dry pan with a nonstick coating, put a little of the butter for frying, heat it and pour in 1 ladle of the pancake batter. Fry 1-2 min. on each side.

Optionally, smear with extra butter.

Stack the pancakes one atop another in a pot, in order to soften them.

Serve with honey, your favorite jam or marmalade and wrap each pancake into a roll.
