How to make
Boil the potatoes until softened. Peel and grate them.
In a pot, pour the milk, butter and flour, stir and put them on the stove on low heat. Boil, while stirring constantly, until thickened.
Let it cool a bit, add the egg yolks and grated potatoes, stir.
Beat the egg whites with the sugar and add it to the dough. Stir carefully, so that the mixture remains fluffy.
Bake the pancakes in a Teflon pan with a little oil.
