How to make
Beat the soft butter into fluffy cream with the sugar. Add the egg yolks one at a time while stirring constantly. Then add the flour spoon by spoon, the cognac and flavor the mixture with vanilla.
Separately, beat the egg whites into fluffy cream with a pinch of salt. Carefully mix them into the main mixture.
Transfer the mixture into a small cake form that you've covered with baking paper and greased lightly. Bake in a moderate oven until ready.
Cool the layer, optionally cut it into 2 separate layers, syrup them lightly with a sugar syrup or compote juice and stick them together with the jam. On top, smear the cake with jam as well and decorate as desired - with dried fruits, nuts or other decorations.
