How to make
Cover 2 oven dishes with baking paper. Sift the flour and mix it with the corn flour, cinnamon and half the sugar. Add the lemon zest and ground almonds.
Whip the egg whites well, then gradually add the remaining sugar and beat until the mixture thickens.
Using a metal spoon, transfer the mixture to the flours and stir carefully.
With oiled hands, form balls from every 2 tsp of the mix. Arrange the amaretti in the oven dishes with spaces between them and leave covered for 1 hour. Sprinkle with powdered sugar.
Bake in a preheated 360°F (180°C) oven for 15 to 20 min. Let them cool on a cooking grid.
