Beat the egg whites well in a bowl.
In a chopper, grind the walnuts along with the dates and add them to the beaten egg whites.
Add the cinnamon and stir. Then spread the mixture with a spoon in a tray with baking paper.
Bake the walnut cookies for about 15 minutes at 360°F (180°C) with a fan.
The flourless and sugar-free walnut cookies are ready.
