How to make
Clean the beef, if it has skin, and cut it into 2-3 cm thick pieces. Spread salt in a suitable container. Arrange the pieces of beef on the salt and cover the meat well with more salt on all sides.
Leave it in the refrigerator for 24 hours. Wash the salted beef under running water (we like it to be saltier, but if you want, you can soak the meat for 1-2 hours in water, so that it is not too salty).
After washing the beef, dry it well with a towel. Thread a strong thread at one end of each piece of meat with a large needle. Place the spices on paper and mix well.
Roll each piece of meat in the spice mix. Hang the pastrami in a dry, cold and ventilated place and dry until ready.
