Ingredients

  • veal - 28 oz (800 g), fillet
  • white wine - 2/5 cup (100 ml)
  • lard - 2.5 oz (70 g)
  • oil - 2/5 cup (100 ml)
  • flour - 1/5 cup (60 g)
  • black pepper
  • salt

How to make

Cut the fillet across into 6 schnitzels, cut off any membranes and tenderize well. Sprinkle each schnitzel with wine, black pepper, salt.

Roll them in the flour and fry until golden in the oil and lard. Serve the schnitzels warm with a garnish of your choice.
