How to make
Mix the flour with the sugar and a pinch of salt, add the cold butter cut into cubes and rub until crumbs are obtained.
Add 2-3 tbsp. of cold water, gather the dough into a ball, shape it into a flat disk, wrap it in foil and put in the refrigerator for about 30 minutes.
Peel the pear and cut it into thin slices.
Roll out the cooled dough onto baking paper into a circle, sprinkle with 4 tbsp. almonds and the lemon peel.
Distribute the pears for the pastry and drizzle them with the lemon juice.
Mix 2 tsp. of sugar and cinnamon and sprinkle the mixture on top of the sweet tart.
Fold the edges inward, spread with honey and sprinkle with breadcrumbs and the remaining almonds.
Bake the Galette with Spelt, Pears and Almonds in a preheated oven at 370°F (190°C) for about 30 minutes. This autumn pastry is incredible!
