"Zucchini and feta cheese patties, which you can serve with a yogurt sauce made from strained yogurt, garlic, lemon and dill, and why not tomato sauce or ajvar."

Ingredients

  • zucchini - 1 pc. (300 - 320 g)
  • white cheese - 7 oz (200 g) feta
  • eggs - 2
  • flour - 2.8 oz (80 g)
  • baking powder - 1 tsp.
  • onion - 3.9 oz (110 g)
  • olive oil - 2 tbsp (30 ml)
  • mint - 10 leaves, fresh
  • parsley - 10 leaves, fresh
  • salt - 1 level tsp.
  • oil - for frying

How to make

Grate the zucchini on a coarse grater without peeling it. Sprinkle with salt, stir and transfer into a colander to strain the water that it will release. Place a bowl underneath and occasionally press with a spoon to strain the zucchini faster. This process takes about 20-30 minutes.

During this time, finely chop the onion and fry it in olive oil until golden.

Take out the fried onion and put it in a bowl. Crumble the feta cheese and chop the fresh mint and parsley leaves.

Separately, beat the eggs and add the flour along with the baking powder. Mix to a smooth mixture or, let's say, a thin batter. Add it to the feta cheese and onion.

Add the grated and well-strained zucchini to everything else in the bowl and mix until a homogeneous mixture is obtained.

Heat the oil and use a spoon to scoop and drop the mixture into the pan. Fry the patties until golden brown on both sides.

Remove them and place them onto two layers of kitchen paper, which will absorb the fat.

Serve the zucchini and feta cheese patties with a sauce of your choice. They go really well with yogurt sauce made from strained yogurt, garlic, lemon and dill, or why not tomato sauce or ajvar.
