How to make
Prepare the crust for the cauliflower pizza by grinding the cauliflower florets in a blender. Remove them and place them into a bowl and grind the Gouda cheese separately.
Pour it over the cauliflower and add the two beaten eggs, coconut flour, salt, oregano and black pepper. Mix until a homogeneous dough is obtained. If it's too thin, add more coconut flour.
Since the cauliflower will release water and liquefy the dough, you can put it in a pan with two spoons of oil beforehand and stew it. Then remove the lid and let the liquid, or rather the moisture, evaporate. However, with this version, you will have to wait for it to cool down before mixing in the eggs and Gouda cheese.
Spread the cauliflower crust on a tray lined with baking paper (it may be lightly greased). It should be thin.
Place it in an oven at 350°F (175°C) and bake until golden. Then spread tomato pizza sauce (I make it slightly spicy) and sprinkle chopped bacon, mozzarella, capers and oregano on top.
Bake until the mozzarella is melted and the bacon in the pizza is lightly browned.
Serve the Pizza with Bacon and Cauliflower Crust warm and enjoy a light and delicious dinner.
