Ingredients

  • eggs - 3
  • sugar - 5 - 7 tbsp.
  • baking powder - 1 tbsp (10 g)
  • yogurt - 0.9 lb (400 g), plain
  • flour - 3 cups
  • vanilla - 3 tsp.

How to make

Put the eggs in a deep bowl and beat them with a mixer for about 1-2 minutes.

Then add the sugar. I add 7 tbsp. sugar because we prefer them sweeter. Beat again for about 3-4 minutes. A fluffy mixture with bubbles is obtained.

In a glass bowl, heat the yogurt in the microwave /for about 2-3 minutes/. After we have warmed it, stir it and add the baking powder, by stirring.

Gradually add the yogurt and baking powder to the egg mixture, beating slowly with the mixer.

Sift the flour and add it gradually, while you beat with the mixer. Finally, add the vanilla. The consistency of the resulting mixture should resemble that of sponge cake mix.

We put the pan on the stove, grease it with a little butter /as for pancakes/. Take a tablespoon of the mixture and pour 3 blini into the pan. By shaping them lightly with the spoon in the shape of circles or ellipses.

Bake until golden on one side and then flip them with the help of a spatula and on the other side again until golden.
