Ingredients

  • beef - 28 oz (800 g), can use pork
  • carrots - 1 large
  • onions - 1 head
  • ham - 2 oz (60 g)
  • flour - 1 tablespoon
  • red wine - 1/2 cup
  • mushrooms - 5
  • parsley - 2 tablespoons, chopped
  • oil - 4 tablespoons
  • salt
  • black pepper - to taste

How to make

Cut the onions, carrots and mushrooms and sauté them until soft in a little oil. Finally add the chopped ham and parsley and season with salt and pepper. If necessary, clean and shape the meat. Make an incision down the middle and remove some of the meat. Salt lightly on all sides, fill it with stuffing, sew it closed and let it stand for about an hour to cool.

Heat oil in a pan and put the meat to fry on all sides. Then move it to an oven dish, add a little oil, a cup of hot water and bake in a moderate oven. During baking, turn from all sides to bake it well. Remove the finished meat from the oven dish and carefully remove the thread.

Fry the flour in the grease in the oven dish and then dilute with wine and a glass of warm water. Stir the sauce for about 15-20 minutes, then strain it.

Serve the meat portions topped with sauce.
