Ingredients

  • rooster - 1
  • parsley - 4 roots (4.5 oz (120 g))
  • carrots - 3 (7 oz (200 g))
  • celery - a head of about 3.5 oz (100 g)
  • bread - 2 slices (5.5 oz (150 g)) old
  • sausages - 7 oz (200 g), dried
  • garlic - 4 - 5 cloves
  • butter - 2/5 cup (100 g)
  • flour - 1 1/3 tbsp (20 g)
  • black pepper
  • citric acid
  • parsley
  • salt - to taste

How to make

Boil the well cleaned rooster whole, along with its entrails, black pepper peppercorns, cleaned carrots, celery in a pressure cooker or in a regular pot with water. Remove everything from the broth.

Finely chop the giblets and vegetables. Mix them with the finely chopped dried sausages, the bread that has been pre-soaked in water and drained, the finely chopped parsley, crushed garlic, black pepper and salt to taste.

Fill the rooster with this stuffing and sew it up. Put it in a greased oven dish and butter it all over. Put it to bake in a moderately heated oven, topping it with broth from time to time and smearing it with butter.

Serve the homemade stuffed rooster with a sauce made from the butter and flour - fried and diluted with the broth. Flavor the sauce with citric acid, salt and pepper to taste.
