How to make
The kid is washed and cut into portions. With the help of a fork or a knife, pierce it in several places so that it can flavor better.
Put all the spices in a large bowl and mix. The meat is spread abundantly with the marinade.
Place it in a tray and cover it with foil. It is best if it is left for at least 3 hours, but it can be more.
When roasting, add the wine and water into the baking pan. Seal again with foil and roast in a preheated oven at 360°F (180°C) for about 2 hours - 2.30 hours.
Since every oven is different, it is advisable to open the foil after the second hour and assess whether the roasted kid needs to be cooked longer.
When the meat is ready, the foil is removed so that it can be roasted.
Optionally, mint or spring onions can be added to this roasted kid with an unique marinade.
