How to make
Take the butter and leave it at room temperature. Dice it in a large bowl. Add the egg and the rest of the ingredients for the dough. Knead a soft dough.
Wrap it in cling film and leave it in the fridge for 15 minutes.
Take the dough and separate it into small walnut-sized balls. Roll each ball in the coconut shavings.
Make a hole in the middle without piercing the bottom. Place them on a tray lined with baking paper, spaced apart.
Fill the holes with marmalade and bake the coconut biscuits at 360°F (180°C) in a preheated oven for 15 minutes.
