Ingredients

  • rabbit - 1 + giblets
  • rice - 1 and 1/2 cup
  • mushrooms - 5.3 oz (150 g)
  • bacon - 3.5 oz (100 g)
  • parsley - 1/2 bunch
  • basil - a few fresh leaves
  • spring onions - 1 bunch
  • garlic - 5 cloves
  • salt
  • black pepper - to taste

How to make

The rabbit is soaked for 24 hours in water.

Cut the bacon and garlic into small pieces and stuff the rabbit with them.

Fry the spring onions, mushrooms and giblets separately in fat.

Add the finely chopped green spices and the washed rice. Leave on the stove for about 5 minutes.

We stuff the rabbit with the stuffing prepared in this way and sew it up.

Place it in a greased baking pan, add a little water and roast for about two hours under foil.

Roasting time varies according to the size of the rabbit, so it's good to check it periodically.

Then we remove the foil and roast until a golden crust is obtained.

It's good to baste the traditional stuffed rabbit with the sauce obtained in the baking pan from time to time.
