How to make
The butter we are going to use should be at room temperature.
The walnuts are pre-soaked in water. They are washed and dried.
Grind them finely in a blender, along with the peel and 1-2 tbsp. from the citrus.
I add oregano and thyme because I will use this butter to flavor when roasting chicken, turkey or duck.
Use the aromatic spices according to the given recipe to suit the dish. Season with a little salt and black pepper and add the soft butter.
Grind, until a homogeneous mixture is obtained.
Spread the mixture on cling film and roll it up. Put it in the refrigerator.
