How to make
You can use fresh or dried prunes for this recipe. If using the latter, soak the prunes for one night in wine.
Cut the pork into pieces, heat the oil in a pan and put the meat to fry evenly until golden. Remove it and in the same oil, fry the chopped leeks until soft. Add the meat, halved plums (pitted), the sugar, jam and stir as you pour in the wine.
Once the alcohol evaporates, add the broth, diluted with the tomato paste. Add spices and sauté until the meat becomes tender.
