  • coconut milk - 13.5 fl oz (400 ml) /tin/ 21%
  • cream cheese - 7 oz (200 g)
  • blackberry cream - 3.5 oz (100 g)
  • sweetener - 2.5 oz (70 g) equal to 70 g of sugar
  • For the blackberry cream
  • blackberries - 5.3 oz (150 g) fresh or frozen
  • butter - 1.1 oz (30 g)
  • lemon juice - 1 tbsp.
  • sweetener - 0.5 oz (15 g) equal to 15 g of sugar
  • egg - 1 pc. + 1 yolk

How to make

I use stevia and erythritol powder which is 1:1 with sugar.

Preparation of the ice cream:

Everything is mixed with a whisk and stored in the freezer for 4 - 5 hours until it turns into a dairy ice cream. You can keep it for days. If it has become rock hard, just leave it at room temperature for a while.

Preparation of the blackberry cream:

The blackberries are grinded in a chopper or blender. Put them in a saucepan. Lemon juice is added to them. Stir over low heat for about 3 minutes. Remove them from the heat and let them cool.

Add the butter and sweetener to the blackberries. The eggs are beaten and also added, while stirring.

The mixture is put on a low heat and stirred continuously until it thickens.

You can strain the cream if you want it to be smoother. Personally, I always strain it through a strainer.

Mix the ice cream with the cream.
