How to make
Melt the chocolate in a water bath. Then we strain the water from the chickpeas in a deep vessel.
Beat with a mixer until you get a homogeneous mixture. To make it faster, add a pinch of salt.
In a small saucepan melt the sugar over low heat on the stove.
Squeeze the orange juice into the melted sugar. After a minute or two, add the walnuts, which we have slightly crushed.
Stir briefly to caramelize and remove from the heat.
Mix the aquafaba with the melted chocolate and stir.
Transfer into cups and let it set in the refrigerator for 2 hours.
Serve the chocolate mousse with the caramelized walnuts and a sprig of fresh mint.
