  • mushrooms - 7 oz (200 g)
  • butter - 1/3 cup (80 g)
  • onions - 3 oz (80 g)
  • flour - 2 tbsp (29 g)
  • white wine - 1 1/5 cups (280 ml)
  • salt
  • black pepper
  • lemon juice

How to make

Cut the boiled mushrooms finely and fry with the grated onion in the heated butter. Sprinkle it with flour and add the white wine and resulting broth.

Let the mixture boil until you get a smooth, medium thick paste with the fat on top. Season with salt, black pepper, lemon or tartaric acid and pass it through a sieve.
