How to make
In a bowl, mix the oil and olive oil. Add the soda to the glass of freshly squeezed orange juice and stir until bubbly, add to the bowl with the oil and olive oil, stir again.
Add the sugar, finely grated orange peel and cinnamon, mix and gradually add the sifted flour. Knead a soft, non-sticky dough.
From the dough, shape elliptical balls into which you place 1 walnut and hide it in the dough. Press the oval balls with a grater, for a jagged shape on top and arrange them on a tray lined with baking paper.
Place the tray in an oven preheated to 360°F (180°C) and bake for about 25 minutes. Remove the tray and let them cool completely.
Prepare the syrup by pouring the water into a pot and adding the cinnamon stick, sugar and a piece of orange peel, boil for two minutes after boiling.
Remove the pan from the heat and add the honey, stir to melt the honey and mix with the syrup.
Dip each melomakarona for 30 seconds in the syrup and remove with a slotted spoon.
While still warm, sprinkle the syrup covered sweets with cinnamon and ground walnuts.
If you are not consuming them immediately, store them in a sealed jar or box.
