How to make
Be sure to choose fresh, young, small okra that has not yet formed seeds.
Carefully cut the stalks, being careful not to expose the seeds, because they release a slimy juice. Let the vegetables soak in a bowl of cold, salted water.
While the okra is soaking, clean the tomatoes. Grind them with a meat grinder and boil them.
Add the cleaned and finely chopped garlic, sugar and salt to taste and boil until the sauce thickens.
Blanch the okra in boiling salted water to which you have added the vinegar for 2-3 minutes until soft, then arrange them in jars. Pour them with hot tomato juice.
Boil for at least 80 minutes.
The jarred okra is ready.
