Ingredients

  • quails - 4 pcs.
  • sage - 1 sprig
  • rosemary - 1 sprig
  • thyme - 1 stalk
  • olive oil - extra virgin to taste
  • salt
  • black pepper - to taste
  • oranges - juice of 1 orange
  • butter - 1.4 oz (40 g)
  • white wine - 2/5 cup (100 ml)

How to make

Quail meat is tender and very tasty. Quails prepared in this way are an exquisite dish, worthy of a restaurant.

On a cutting board, chop the rosemary, sage, thyme (washed in advance).

Wash and dry the quails. Put them in a large bowl, drizzle them with a little olive oil and sprinkle with a few grains of black pepper and pour the juice of an orange: cover them and marinate them in a cool place for an hour.

Strain them from the marinade, dry them, salt them on the inside and fill them with a mixture of butter and chopped herbs.

This way you will get really tasty roasted stuffed quails.

Grab a baking pan and arrange the stuffed quails. Season with salt and pour a few tablespoons of olive oil over them, pour the wine on the bottom of the baking pan.

Arrange around them, if you wish, sliced zucchini, potatoes, or whatever you like.

Cut an onion in half and a whole head of unpeeled garlic and put them in the baking pan around the quails.

Roast the quails in the hot oven at 390°F (200°C) for 30 minutes or until they have an appetizing golden brown crust.

Place the Roasted Stuffed Quails with Herbs on 4 individual plates, drizzle with the juices from cooking and serve with vegetable caponata if desired.
