Ingredients

  • zucchini - 2 pcs.
  • onion - 1 onion
  • minced meat - 12.5 oz (350 g)
  • garlic - 2 cloves
  • paprika - 1 tbsp.
  • salt - to taste
  • oil
  • cumin

  • eggs - 2 pcs.
  • yogurt - 9 oz (250 g)

How to make

Cut the washed zucchini into cubes and finely chop the onion.

In a pot with oil, stew the onion and garlic until soft.

Add the zucchini and sprinkle with a little salt. Let the water evaporate slightly and add pieces of minced meat.

Stir to form crumbs and sprinkle with paprika. Pour a little water and season with spices.

Transfer into a suitable tray and bake in a heated oven at 360°F (180°C) or until the water evaporates.

Take out the tray and pour the beaten eggs mixed with the yogurt and return into the oven to brown.

Remove, cool slightly and cut into squares.

The moussaka is served sprinkled with chopped parsley.

The low-carb zucchini moussaka is ready.
