Ingredients

  • rye flour - 4 cups
  • wheat flour - 3 cups
  • sugar - 1 tsp.
  • salt - 2 tsp.
  • wheat bran - 2 cups
  • cumin - 2 tbsp.
  • onion - 2 tbsp. powder
  • fennel - 1/2 tsp. crushed
  • dry yeast - 2 packets (0.35 oz - 10 g each)
  • water - 3 cups
  • vinegar - 1/4 cup
  • molasses - 1/4 cup dark or jam syrup
  • butter - 1/4 cup melted
  • chocolate - 1.1 oz (30 g) bitter
  • eggs - 1 pc.

How to make

The rye and wheat flour are sifted together. Mix two full cups of the flour mixture with the sugar, salt, bran, yeast and spices.

Combine the water, vinegar, molasses, chocolate and butter in a saucepan and heat it over low heat. The mixture is poured into the dry ingredients and everything is beaten with a mixer into a smooth mass.

Add more flour and knead a soft dough, which is placed on a floured surface, covered and left to rest for 15 minutes.

Then it is kneaded by adding the rest of the flour. The resulting elastic dough is lightly smeared with butter, placed in a deep container, covered and left for 1 hour in a warm place to rise.

It is then divided into two parts, from which two loaves are formed. Put them in an greased baking pan or molds and spread them with the beaten egg.

Bake for about 1 hour in a moderately preheated oven.

The Russian Black Bread is ready.
