How to make
Knead the dough by first sifting the flour into a bowl. We make a hole in it and pour the eggs, olive oil, salt and sugar.
Begin to stir by hand to mix the ingredients. Knead the dough and cover it with a towel for 30 minutes.
For the stuffing, pour all the ingredients into a blender and grind until a thick homogeneous mixture is obtained.
After the dough has been left for a while, roll it out into a thin crust. Cut circles using a glass for water. Place a little of the stuffing in the middle of each circle (about 1/2 tsp.).
Spread the edges with beaten egg. Fold each circle into a crescent shape and press the edges together with your fingers.
Carefully roll each crescent around our finger, smearing both ends with egg and sticking them together. Shape the tortellini like a collar to give them a better look.
Put a pot of water on the stove and boil it. After the water boils, pour a little salt and add the tortellini.
Boil them for about 10 minutes and serve them with sauce of choice or drizzle with olive oil.
The homemade tortellini are ready.
