How to make
Sift the flour into a bowl and pour the yeast and sugar. Make a well in which you can pour the water and oil - slightly warmed. Add half of the salt and knead a smooth elastic dough. At the end of kneading, add the remaining salt.
Spread the dough with oil and leave it to rise for 40 minutes in a warm room.
Knead again briefly, by pressing down to release the air from any bubbles that form. Divide into 5 equal parts and form each one into a strip and join the ends in the shape of a pretzel.
Arrange far apart in a tray lined with baking paper or a greased one and leave them to rise again for about 30-40 minutes or until they have doubled in size and have risen nicely.
Preheat the oven to 390°F (200°C) - upper and lower heating resistor without fan, by placing inside a refractory bowl with water to generate steam to guarantee a nice crispy crust. Spread the pretzels carefully with water mixed with a few drops of oil or olive oil and sprinkle with poppy seeds and coarse flaky salt. If desired, sprinkle some sesame seeds.
Place them in the preheated oven and bake them for about 25-30 minutes or until lightly golden brown.
Serve the pretzels hot or cold with a favorite dish.
