  • watermelon - 22 lb (10 kg) of small unripe watermelons
  • dill - 4 sprigs
  • water - 2.6 gal (10 L)
  • salt - 0.9 lb (400 g)
  • celery - 1 stalk
  • black pepper - 4 - 5 grains
  • mustard - 1 tbsp. grains

How to make

Healthy and firm watermelons are chosen for this recipe, which are washed well and dried. Each watermelon is then pierced with a needle in several places.

Arrange the fruit in a suitable container, by placing the spices and greens between them.

Make a solution from the water and salt and wait until a homogeneous liquid is obtained.

Pour the resulting brine over the melons.

If necessary, prepare more of the brine. Finally, close up the container.

The pickle is strained every day for the next two weeks and more solution is added to the watermelons.
