How to make
The dry hard cheese is grinded into a powder. The more mature and aromatic the yellow cheese is, the nicer the cheese sticks will be.
The yeast is crushed in the slightly warmed water. Pour in the olive oil and cottage cheese and mix everything very well.
Sift the flour to the liquid mixture, add the salt and half of the grated cheese.
A smooth dough is kneaded, which is covered with cling film and stored for 30 minutes in the refrigerator.
The dough is rolled out onto a kitchen counter, while at the same time it is sprinkled with the remaining cheese. When pressed with the rolling pin, it sinks into the dough. This is the process until the yellowish powder is not visible and a thin crust is obtained.
Rectangular 7-8 cm long and relatively thin strips (1.5-2 cm) are cut, which are arranged in two trays covered with baking paper. Each tray of cheese sticks is baked at 390°F (200°C) in a preheated oven for 15 minutes.
The ready cheese sticks are left to cool and are served as a company to an aperitif or to be munched on by people of all ages at any time.
