If you want to diversify your mornings with a breakfast different from the one you have every morning, then these fried cheese sticks are one of the ways.

In addition to their unique shape, they have a traditional taste, but with an incredibly crispy crust on the outside and they are soft on the inside.

Fried breakasts are prepared quickly, which makes them suitable for weekday breakfasts, when we do not have much time for adventures in the kitchen.

The dough is made similar to mekitsi dough, with the starch in it contributing to a softer and lighter texture, although in a small amount. For kneading, I add more of it when necessary, because depending on the size of the egg or the density of the yogurt each time the dough becomes different in density and then, if necessary, add flour or starch.

Beat the egg with the salt and sugar and add the oil and yoghurt. If I use one that is store-bought and not homemade, I also add a teaspoon of vinegar, as the yogurt I buy is not very sour.

Put the soda in the yogurt and mix lightly without mixing with the other ingredients. Leave it to activate.

Add the flour and starch and knead a smooth dough. Do not knead for a long time, but only until the ingredients are well combined. If necessary, as we said, add more flour, in order to get a soft but not too sticky dough.

Balls are torn from it and are then flattened into an elongated shape. The white cheese is crumbled lengthwise in a strip and wrapped and sealed. The resulting stick is rolled between the two palms.

The cheese sticks are fried in hot oil until they aquire a golden color. The temperature should not be maximum, but rather moderate, so that they do not remain raw on the inside.

Place the fried cheese sticks for breakfast onto kitchen paper, so that it can absorb the excess fat.

The fried cheese sticks are eaten warm with yogurt.
