How to make
Peel and cut the potatoes into sticks.
Fry them in heated oil until golden and remove the fries and place them onto kitchen paper to absorb the fat. Finally, salt them. It would also be healthier to fry them in an air fryer if you have one.
Chop the fresh and very tender onion and mix it with a little olive oil, lemon juice, a pinch of salt and black pepper. Optionally, you can add crushed hot pepper. Stir well.
Crack the eggs into a pan with a little oil and fry them so that the yolk remains almost liquid. You can choose whether to put 1 or 2 fried eggs in each portion.
Divide the fries into two portions and put the eggs on them.
Spread the spring onion dressing on top.
Serve the fries with eggs and spring onions warm.
