How to make
Cut the lamb into large portions and in a deep bowl rub it well with paprika, salt, mint and oil.
Cut the spring onions, mint and pour them into the baking pan, by drizzling them with oil and sprinkling with paprika and salt. Stir and arrange the portions of meat on top.
Pour water over the meat without covering it and wrap it with aluminum foil.
Bake the lamb in a moderately heated oven for about an hour and a half, then remove it and add the washed rice and chopped mushrooms.
Cover it again with foil and bake it for another 30 minutes. Then remove the foil and bake, until the meat and mushrooms aquire an appetizing color.
The tender lamb with mushrooms and spring onions is ready.
