How to make
In a deep bowl, pour the 3 types of flour, which you can sift if you like: half a cup each of whole grain, wheat and corn flour.
Add the aromatic ones - dried and grated thyme (3 teaspoons) and basil (2 level teaspoons). Finely chop about 20 leaves of fresh tarragon and add it to the bowl.
Pour 1 level top tsp. of baking soda and activate it by pouring it with a tablespoon and a half of homemade apple cider vinegar.
Season with 1 tsp. fine Himalayan salt, 1/4 tsp. ground black pepper and 2 tbsp. olive oil.
Mix well by hand and slowly pour half a teacup of warm water. Knead a soft, slightly elastic and aromatic dough.
By hand, roll out the grissini one by one - the same length, by arranging them in a large square baking pan, which has been greased with sunflower oil. From this amount of dough, 2 batches of 35-40 pieces are obtained, which are about 4″ (10 cm) long - a total of about 70-80 crunchy bites.
Bake the grissini breadsticks in a heated oven at 360°F (180°C) for 15 minutes. It is very important to keep an eye on them and turn them off in time.
