How to make
Pour the warm water (not hot) into a deep bowl. Pour the soda into it and add the apple cider vinegar to activate it. Then add, stirring by hand with a wire whisk, liquid homemade dandelion honey, vanilla, Himalayan salt, corn starch, sunflower oil and finally the thickening elements - whole grain flour and fine corn flour. The mixture is not very thick, but enough to make fluffy pancakes.
In a slightly heated pan with sunflower oil (with a non-stick coating), shape small pancakes (about 10 cm) and as soon as they form small bubbles, with the help of a soft spatula, slightly lift the pancake from one corner and by lifting gradually, carefully peel it off and turn it to cook on the other side.
Repeat the same with the remaining vegan pancakes until you use up the whole mixture. They do not need to be fried in fat (if the pan has a non-stick coating) - nicer and fluffy American pancakes are obtained without frying and are healthier.
Stack the warm small pancakes one on top of the other in a container with a lid, so that they don't dry out and every new hot one is placed under the others to keep them soft. About 18 pcs are obtained.
Serve the fluffy Vegan American Pancakes for breakfast - optionally with your favorite jam (pears, figs, raspberries, strawberries, etc.)
