Defrost the cherries and squeeze out the juice.
You can pre-soak them in cognac. They become more aromatic and tastier.
From the red beans and sugar, prepare a sweet anko paste.
Add the cream cheese to the cooled bean puree and mix very well.
Cool the resulting mass in the refrigerator for 20-30 minutes.
Make small flattened circles from the mixture, put 4 or as many cherries as you like, pinch the edges and shape the candies.
Roll the candies in ground almonds, walnuts, granola or biscuit crumbs.
Eat the red bean and cherry truffles with the pleasure it deserves.
