"If you are one of those people who can only live on soup, try this new recipe for Dairy Potato Soup with Coriander"

Ingredients

  • potatoes - 0.9 lb (400 g)
  • spring onions - 2.3 oz (65 g) or onions
  • garlic - 3 cloves
  • celery - 1 small stalk of celery with part of the leaves
  • coriander - 5 - 6 sprigs fresh or 2 tsp. dried leaves
  • milk - 4/5 cup (200 ml)
  • vegetable broth - 4 cups (1 liter)
  • salt - by taste
  • oil - 2 2/3 tbsp (40 ml)
  • vermicelli noodles - 2 handfuls

How to make

Clean and finely chop the onion, garlic and celery stalk with the leaves. Fry them for 7-8 minutes on moderate heat in the oil.

Pour the vegetable broth and season with half of the chopped coriander leaves (or 1 tsp. dried leaves) and salt.

While the liquid is boiling, peel and cut the potatoes into small cubes. Put them in the soup and boil them covered for 25 minutes.

Add the noodles, milk and the remaining coriander and cook for as many minutes as the noodles need to be fully cooked, about 3-4 minutes.

Serve the potato soup hot.
